Each bar's striking package is distinguishable by the holiday or event being celebrated. Some examples are the royally purple, "Queen" bar or "I Love U" bar. Beautifully decorated wrapping papers and boxes along with funny, thematic notations, make even an everyday treat seem festive.

Taking a different approach, Choclatique's stylish swirl-patterned chocolate artistically enhances the appearance of their tablets or larger-sized tapestries. Another strategy is to pack in the nuts and fruit with content sometimes as high as 20% of total weight. Elite chocoholics, however, know such simple inclusions and typical fillings have become fairly passé' and utilize other candy enhancement methods.

Chocolate makers are mixing unusual flavors, using fancy ingredients or obscure refined inclusions to edge out the competition in this lucrative market. Just consider some of the exotic things companies like Lindt and Vosges Haut-Chocolate are adding: chili, papaya, jalapeno, pomegranate, plantains, bacon, wasabi, mushrooms, olives, and goji berries! Surprisingly, "Mo's Bacon Bar" is Vosges' biggest seller.

Those who want their candy to be a healthy extravagance are also finding more choices. Bars with ever higher cocoa content and infusions of herbs, spices and teas are launched each year. Ghirardelli's "Luxe" and "Intense" bar lines are between 60-72% cocoa. Q91 by Choclatique has 91% and one of Lindt's "Excellence" bars is 99% cocoa.

Even the Mars Corporation is touting premium chocolate's therapeutic effects. The confectionary giant is hoping for success from new lines of their popular Dove bars. "Dove Beautiful", which is made with vitamins and minerals to keep skin moist and healthy. An additional product called "Dove Vitalize" contains plant, cocoa extracts and B vitamins, designed to boost energy and regulate cholesterol.

Manufacturers in this rarified category employ a myriad of unique techniques to convey exclusive affluence. So, is it an entrée? Dessert? Treatment? Unique packaging and rich ingredients are changing perceptions of what candy can offer us. One thing's for sure, these aren't your average chocolate bars.

Exploring NC Mountain Communities

Mountain homes in Western North Carolina have been slow to sell in the down real estate market and there are a number of reasons why. I visit gated developments all over the Blue Ridge Mountains and I've come to a few basic conclusions.

The most basic of these is that when it comes to destination communities (think golf course communities, mountain conservation communities, gated luxury mountain home communities, etc.) most developments in WNC are at a loss as to how to appeal to the buyer. Typically the term "end user" is used which just goes to show how dependent many of these developers became on the investment dollars that flowed in during the heights of the real estate bubble.

The problem as I see it boils down to this: Nobody wants to be the first person to build in a 200+ home site community.

Request some information from most developments in western North Carolina and a couple of things happen, the first of which is that a marketing brochure gets mailed out to you. Typically these marketing pieces are heavy on glitz and low on information. I can't tell you how many times I see the words "nestled into the mountains" used to describe a home site. I don't know how many ladies are getting hot stone massage at the community spa either, but this seems to be a favorite image to use. The grandchildren are riding horses and the neighbors are playing tennis. Only problem is that you need a mountain bike to get to the home sites because once you visit the community you realize that there isn't a paved road, nobody lives there, no homes have been built and the 45% sold out just means that there are 100 investors waiting to resale or foreclose on their property.

The number one objection I hear from people that visit North Carolina to look at Mountain Property is that the communities they visit are ghost towns. It isn't hard to tell, once you have your feet on the ground, if a community is the right place for you. The problem is that people tire out after spending an entire weekend looking at communities with no delivery on the promise made by their marketing. So few look to educated professionals prior to visiting. Rather, they respond to developer advertising and then settle for disappointment.

As it turns out, there are plenty of beautiful built out communities here in western North Carolina. Developers such as Biltmore Farms have done exceptional work. But many never see these communities because they tire of the search before they ever realize that a mountain home can be found that fits the bill.

HACCP Software

HACCP (Hazard Analysis Critical Control Points) is the main way that almost all Countries in the world use to ensure safer food from our food producing factories and, since 2006, our restaurants, pubs, hotels and other catering businesses. Yet, ignorance prevails throughout the UK and the world on what HACCP is really all about. Even our auditing and inspection organisations have widely different views as to what how it is to be implemented.

HACCP is based on seven principles which effectively state that for any food preparation process we should firstly map out a process flow diagram of the steps involved in making the food. Then, for each process step, we look carefully at the things that could go wrong that might result in the consumer becoming ill or being injured, e.g. the growth of harmful bacteria in the food due to the temperature being too high. At this stage we then do some risk analysis to assess if the risk is significant or not and if it is we then identify a control measure for the hazard. Having identified a significant hazard we now proceed to implement a control measure and then decide if the hazard is a CCP (Critical Control Point) or not.

A CCP is basically a hazard that if NOT CONTROLLED would make people ill or cause them injury. If we identify the hazard as a CCP then we must set critical limits, e.g. Temperature 1-5oC along with a monitoring procedure and corrective action to be implemented if the critical limits are breached.

So if we look at it HACCP is a logical process that takes us through the process of:

1. Identification of hazards for a given process

2. Decide if each hazard is a significant risk or not

3. If significant implement a means of controlling the hazard

4. Decide if the hazard is critical to food safety

5. Set levels that are safe for the hazard

6. Implement monitoring

7. Decide on what corrective action to take if the levels are breached

HACCP is easy to explain in terms of an everyday task such as driving your car. If you think of the process of driving down the road. A number of hazards may present themselves, it may be wet or icy outside and these mean that the risk of skidding is higher than normal. Therefore the hazard would be 'Crash the car due to icy conditions' . If the road is very icy then the risk would be high and therefore we would want to have a control measure to prevent us crashing. The control measure would be 'Drive slowly and carefully.'

If we look at the consequences of crashing we could be killed and therefore we have to say this would be Critical and is therefore a CCP (Critical Control Point). We might decide that it is safe to drive in these conditions at a maximum speed of 10 miles per hour; this would be our critical limit. Our monitoring procedure would be to keep an eye on the speedometer to ensure we do not exceed 10 mph. The corrective action is to gently apply the brakes until we are within the speed limits set.

The above demonstrates that HACCP (or at least the principles of it) is something that we all do naturally every single day of our lives (even without thinking of it!) and yet, as soon as we need to consciously apply these same principles to food safety many have difficulty with it.
